A dairy-free twist on the classic greek salad – just as delicious and vibrant! This dish is simple yet elegant, full of rich, flavourful vegetables.
Nutrition nuggets: Greek salad comes alive when dressed with extra virgin olive oil. Rich in monounsaturated fats and antioxidants, olive oil can help combat inflammation, strokes, heart disease, and cancer (among other diseases). It also contains antibacterial properties that can ward off bacterial infections resistant to antibiotics!
- Halve the tomatoes, slice the cucumber into thick halves, thinly slice the bell pepper into rings, thinly slice the red onion into half moons, and chop the kale
- Place everything into a large salad dish.
- Pour the olive oil and red wine vinegar. Season very lightly with salt (just a pinch).
- Give everything a very gentle toss to mix.
