Thunder Tea Rice

Ingredients

1. Tea

  • Handful of Thai basil leaves with stem
  • A handful of mint leaves with stem
  • Handful of coriander leaves
  • Lemon grass
  • 1 tsp miso paste
  • 1 tsp green tea
  • 2 cups water

 

2. Rice

  • 1 cup brown rice
  • 2 cups water
  • 200g carrots
  • 200g beans
  • 250g cabbage
  • 100g bean sprouts
  • Handful of spring onions
  • 200g organic tofu
  • 1/2 cup roasted peanuts
  • 4 tbsp roasted sesame seeds
  • Chili flakes (to taste)
  • 5 tbsp sesame oil
  • Egg (optional)

Thunder Tea Rice, aka. 擂茶饭, is a delicious and healthy dish that is extremely simple to make. There are different variations of thunder tea rice – some might put tofu in it while others might put cabbagge or azuki beans.

Directions:

  1. Grind the basil leaves, mint leaves, coriander leaves and lemon grass with water. Set it aside.
  2. Add miso paste and green tea powder into the mixture and set it aside.
  3. Soak the rice in water for an hour before cooking it with 2 cups of water.
  4. Mix a quarter of the tea into the rice.
  5. Saute each of the veggies as well as the tofu, separately, in 1 tbsp of sesame oil with garlic, sesame seeds, chili flakes, and salt.
  6. Plate the veggies and tofu around the shallow soup plate; put the green tea rice in the center.
  7. Garnish with peanuts, sesame seeds, and spring onions.
  8. (Optional) Add a fried egg on top.
