Smoked Salmon Salad with Zesty Lemon Dressing

INGREDIENTS:

  • 3 tbsp extra virgin olive oil

  • 2 tbsp fresh lemon juice

  • 1 red onion

  • 6 oz smoked salmon (thinly sliced)

  • 7 oz salad leaves1

  • 1 bunch of chives

  • 1 medium English cucumber

  • Portion of radish

  • Salt and freshly ground pepper

Directions:

  1. Thinly slice the red onion; halve and thinly slice the radish; peel the cucumber, halve length-wise, remove the seeds, and thinly slice.
  2. In a large bowl, whisk the olive oil with the lemon juice and dill and season with salt and pepper.
  3. Add the cucumber, radish, red onion, salad leaves, and smoked salmon.
  4. Toss well.
