Mediterranean Sardine Salad
2 x 120g cans sardines (sautéed with cherry tomatoes)
1 tbsp olive oil
Handful sundried tomatoes
90g salad leaves
1 tbsp red wine vinegar
Handful green olives
1 tbsp capers, drained
A super healthy salad packed with punchy flavours. Oily fish, olives, and capers hero the dish.
Nutrition nuggets: Fish has been shown to protect against heart disease and cancer because of a high omega-3 fatty acid content. Choosing smaller fish such as sardines is best as they accumulate less mercury, PCBs, and environmental toxins.
- Mix the olive oil and vinegar
- Add the capers, olives, tomatoes, and sardines to the salad leaves
- Drizzle the olive oil and vinegar dressing over the salad
- Gently toss the salad
