Almond Flour Banana Muffins

INGREDIENTS:

  • 1 cup almond flour

  • 3 eggs, large

  • 1 tsp baking soda

  • 1 tsp pure vanilla extract

  • 1 tsp cinnamon

  • 4 ripe bananas (brown spots), large

  • 1/4 cup dark chocolate chips

A yummy, spongy treat that will melt in your mouth. The best part? It’s totally healthy! Your kids will love these muffins any time of the day – for breakfast, dessert, or even just a midday snack!

Nutrition nuggets: Almond flour is a popular alternative to traditional wheat flour, made of ground almonds and packed full of nutrients. Rich in vitamin E and magnesium, it can lower blood pressure and improve blood sugar control as well as prevent damage from harmful free radicals.

 

Directions: 

  1. Preheat oven to 175°C and spray silicone muffin tin with cooking spray. Set aside.

  2. In a powerful blender or food processor, add bananas, eggs, vanilla, cinnamon, baking soda, salt and process until smooth.

  3. Add almond flour and process just enough to combine. Add chocolate chips and stir.

  4. Using an ice cream scoop or spoon, divide batter between openings of previously prepared muffin tin and bake for 30 minutes, or until golden brown and toothpick inserted come out clean.

  5. Remove from the oven, let cool 20 minutes and enjoy.
